If anything caused them to "die" it was the birth, spread, and eventual domination of the religion of Christianity. Point of clarification: most pantheons were immortal, but the exception to that rule were the Norse Gods, who could die from injury or old age - only by eating Idun's apples did they stay young, and they had to partake at least once a day for the magic apples to work.
